2 c. plain yogurt
1 c. oatmeal (uncooked)
½ c. sugar
2 Tlb. orange juice
1 c. peaches, diced
1 c. apples, diced
½ c. blueberries
1 banana, sliced

Blend yogurt, sugar, orange juice, and fruit. Best if it sets overnight or for several hours. Add the banana just before serving.

You can use any combination of fruit you like. I used half sugar and half splenda, too.

Cranberry Salad PDF Print E-mail

2 c. sugar
2 c. water
1 bag cranberries
1 6 oz. package raspberry Jell-o
2 c. miniature or 30 large marshmallows

Bring sugar and water to boil. Add washed cranberries. Cook until the skins on all cranberries pop. Remove from heat and stir in Jell-o and marshmallows. Stir until completely dissolved. Cool.

Add:
2 c. celery
2 c. chopped apples
1 c. nuts

Chill until firm.

Chocolate Upside Down Cake PDF Print E-mail

2 cups miniature marshmallows in the bottom of a greased 9 x 13 pan.

Combine
1 cup brown sugar
½ cup cocoa
2 cups hot water
Mix and pour over marshmallows

Prepare cake mix as directed and spoon over marshmallow mixture.

Top with ½ cup nuts

Bake at 350 degrees for 50 minutes.  Invert onto serving tray. Store leftover in refrigerator.

 
Mystery Pie PDF Print E-mail

Mystery Pie

1¼ c. sugar      
1½ c. water
1 tsp. cinnamon
1½ tsp. cream of tarter
1 tsp. vanilla
1 stick butter
16 soda crackers
1 unbaked 9” pasty shell

Break soda crackers into pie shell. Combine and heat remaining ingredients and pour over the crackers. Bake at 400 for 30 minutes or until browned.

 
Spanish Rice PDF Print E-mail

1 c. rice     
1 lb. browned turkey sausage
2 c. chicken broth
1 10 oz. can Rotel tomatoes
1 can kidney beans, drained

In large skillet brown and drain sausage. Add rice, broth, and tomatoes. Cook 20 minutes or until liquid is absorbed and rice is tender. Add kidney beans.

For a spicier dish add: onions, green peppers, and hot sauce to taste.
