POPPY SEED CHICKEN PDF Print E-mail

6 chicken breasts – boiled and torn in small pieces
2 cans Cream of Chicken soup
1 8 oz. sour cream
2 rolls Ritz Crackers, crushed
2 T. poppy seeds
1 stick butter/margarine, melted

Mix soup and sour cream in a large bowl.  Stir in chicken pieces.  Set aside.   Mix crushed crackers and poppy seeds.  Add melted butter or margarine and mix until crackers are well coated.

Place 1/2 of the cracker mixture in bottom of a greased 9x13 pan. Spoon chicken mixture evenly on top.  Sprinkle remaining 1/2 of cracker mixture over chicken.

Bake at 350 degrees for 45-60 minutes, until heated thoroughly.  Place a foil tent over top if the cracker mixture begins to brown too much.  It should bake to a golden color.

 
Spicy Mexican Chicken PDF Print E-mail

Line bottom of crock pot with boneless, chicken breasts.
Combine:
        1 can cream of chicken soup
        1 pkg dry taco seasoning mix
        1 cup sour cream
        1 16 oz. jar of salsa
Pour over chicken and cook in crock pot 6-7 hours.
Or, if you prefer, bake in 350 degree oven for one hour.
Suggestion:  Serve with tossed salad, seasoned rice, chips and salsa.
Brownies and ice cream too for the perfect meal.
